Mexican Style Shredded Pork
This is shredded pork recipe is easy to prepare and simmers in a slow cooker all day, ready to enjoy when you arrive home. I serve it over rice with cheese, salsa, guacamole, and/or a dollop of sour cream.

Ingredients

arrow_right Boneless Pork Loin Roast, 3 Lb
 arrow_right Salt, 1/2 Tsp
 arrow_right Diced Green Chile Peppers, 2 (4 Oz) Cans
 arrow_right Garlic, 3 Cloves
 arrow_right Chipotle Sauce, 1/4 Cup
 arrow_right Long Grain White Rice, 1 Cup
 arrow_right Lime

Cooking Instructions

Preparation
 Cut pork loin into 2 inch pieces
 Crush garlic
 Squeeze juice from lime
 Chop cilantro
 
 
 Cooking
 Place the roast in a slow cooker, and season with salt.
 Place chile peppers and garlic on top of roast.
 Pour in the chipotle sauce and 1/2 cup water.
 Cover, and cook 7 hours on Low.
 In a pot, bring 2 cups water and rice to a boil.
 Mix in the lime juice and cilantro.
 Reduce heat to low, cover, and simmer 20 minutes.
 Remove roast from the slow cooker, and use two forks to shred or double up on rubber gloves and use your hands.
 Return pork to the slow cooker, and allow to sit 15 minutes to absorb some of the liquid.
 
 Serving
 Serve over the cooked rice or wrap in a tortilla shell.
